
College Falafel is a quaint family operated business; it is run by Bardhyl and Oljana Musa. They both have an extensive background in the restaurant and food business.
Bardhyl graduated from the ‘Food Chemistry and Hospitality Services’ program at the University of Tirana, Albania in 1986. Upon graduating Bardhyl worked throughout Albania managing restaurants. During this period he was also researching healthy menu options and provided the restaurants he managed with recipes that he had created.
Oljana graduated as a chef from the Culinary College in Tirana, Albania in 1986. She was quickly promoted to head chef of the main restaurant in the city of Konispol. They were married in December of 1990 and soon after opened a restaurant and bakery in the town of Vrina in the Saranda district.
They arrived in Canada on August 16th, 1998 along with their 5 year old son Andi. In 2003, Oljana graduated from George Brown College’s Bakery Arts program. She enjoyed combining Mediterranean and Canadian baking techniques. Also in 2003 Bardhyl and Oljana established a small Mediterranean restaurant. Through their decades of experience they created a menu with original recipes.
In 2009 they took over the neighbouring business and transformed that area to accommodate a sit-in area. This was done by taking apart the connecting wall and renovating both the existing and the additional lot. This expansion has created a more welcoming and enjoyable atmosphere.
For Bardhyl and Oljana, cooking is both an art and a science, this helps produce the best quality dishes. The put genuine love and care into all of their dishes. All of the dishes in College Falafel are made from scratch; its recipes are all unique and won’t be found anywhere else. All of the recipes present have been either created by Bardhyl and Oljana, or passed down from one generation to the next.
College Falafel’s slogan is ‘Healthy Mediteranean Food’ which means the menu is based on the world’s finest and most popular cuisinmes of the countries that border the mediterannean sea.
Throughout the region, the food is rustic and uncomplicated, bringing with aromatic herbs and fresh flavours.
